douglas fir, the handsome american immigrant in our local city parks, gives a bright woody flavour paired with the mysterious quality of smoked english garden sage. the vermouth is made from a base of beautiful natural red wine, Pegase from domaine d’epinay, with épine noir, a blackthorn flower and cognac infusion. passionflower gin is heady green almond and rowan berry gives it the medicinal fruity tang you’d usually associate with an italian aperitif. a touch of wormwood is the deepest bitter note
