this is a wet martini, meaning a ratio of 2/3 gin to 1/3 vermouth which really allows the complex dusk wild dry vermouth to be noticed
the recipe is built on a beautiful organic natural white, Pegase blanc from domaine de l’epinay
it is a wide bouquet of bitter plants; mugwort, gentian, orris, quassia, herbs; sage, bay, fennel, flowers; yarrow, chamomile, gorse, lilac, and spices; star anise, coriander and juniper. most of these plants are foraged from our local area
the drink is brightened with seville orange peel bitters and tied together with a drop of salt
the martini comes ready to drink, just chill your bottle, ideally your glass too and garnish with a gin pickled nettle leaf
